A unique rice made specifically for eels, supervised by a long-established rice shop that has been in business for 100 years.The rice is specially blended to match the eel, and is cooked on the firmer side, taking into consideration the sauce that will be poured over it.It goes perfectly with our original homemade sauce, which was developed in collaboration with a long-established dashi stock store in Kyoto.The rich flavor and spreading aroma of tamari soy sauce combines with the rich umami and high-quality fat of the eel to create a mellow, deep taste.
